Luau Bars


2 c sifted flour
1/2 t salt
2 t cinnamon
1 1/2 c brown sugar, packed
3/4 c shortening
3 eggs
2 T milk
1 t vanilla
1 c shredded coconut
1 c macadamia nuts, chopped
1 (8 oz) can crushed pineapple, drained

Preheat oven to 350.  Grease and lightly flour a 13x9" pan.  Resift flour with salt and cinnamon.  Gradually add brown sugar to shortening, creaming mixture until light and fluffy.  Add eggs, milk, and vanilla and beat until all ingredients are well mixed.  Gradually stir in sifted dry ingredients.  Mix in coconut and nuts.  Stir in crushed pineapple.  Spoon into prepared pan.  Make up Brown Sugar Drizzle (below) and drizzle over batter.  Bake for 25-30 minutes.  Cool for 30 minutes, cut into bars.

Brown Sugar Drizzle: Stir 3/4 c brown sugar, 2 T butter, 1/4 c cream, 1 t corn syrup together until well blended.  Cook over medium heat, stirring occasionally, to soft ball stage (250 F on candy thermometer). Stir in 1 t vanilla.
