Little Caesar's Pizza Sauce


12 oz can tomato puree
1/2 t dried oregano
1/4 t dried basil
1/4 t salt
1/4 t ground black pepper
1/4 t sugar
1/8 t garlic powder
1/8 t onion powder

Over medium high heat, bring to a simmer.  Reduce heat to low and simmer for 35-40 minutes.  Makes 2 1/2 cups.

Alfredo Sauce



1/4 c butter
1 c heavy cream
1 clove garlic
1 1/2 c parmesan cheese
1/4 c parsley

Melt together until blended.  Serve over pasta.

Manicotti



8 oz pkg Manicotti
2 c shredded mozzarella cheese
12 oz creamed cottage cheese
2 eggs, slightly beaten
1/2 c dry bread crumbs
1/2 c grated parmesan cheese
2 T chopped parsley
1 t sugar
1/2 t salt
1/4 t pepper
1 qt spaghetti sauce
1/4 c grated parmesan cheese


Heat oven to 350.  Cook manicotti to desired doneness as directed on the package.  In large bowl, combine remaining ingredients except spaghetti sauce and 1/4 c parmesan cheese.  Stuff each cooked manicotti with about 1/2 cup filling.  Spread 2 cups spaghetti cause on bottom of 13X9 inch pan.  Place filled manicotti in a single layer over sauce.  Pour remaining sauce over top.  Cover and bake at 350 for 40-45 minutes.  Let stand 5 to 10 minutes before serving. Sprinkle with 1/4 cup parmesan cheese. 

Lasagne




1 lb ground beef
1 clove garlic minced
1 T chopped parsley
1 T basil
1 1/2 t salt
2 cups tomatoes
2 6 oz cans tomato paste
10 ounces noodles
3 cups large curd cottage cheese (24 oz)
2 beaten eggs
2 t salt
1/2 t pepper
2 T chopped parsley
1/2 c grated parmesan cheese
1 lb mozzarella cheese sliced thin
Brown meat-spoon off excess fat.  Add next 6 ingredients.  Simmer until thick stirring occasionally.  Cook noodles in boiling salted water.  Combine cottage cheese and next 5 ingredients.  Place 1/2 noodles in 13X9X2 inch pan, spread half the cottage cheese mixture over.  Add 1/2 the mozzarella cheese and 1/2 the meat mixture.  Repeat layers.  Bake at 375 for 30 minutes.  Let stand 10-15 minutes before cutting.

Crazy Bread


Use any bread recipe you like.  French bread works great.  Mix and knead dough.  Let rise once.  Form into desired shape.

Melt and brush over breadsticks:
2 T butter
1 t garlic salt

Sprinkle with Kraft 100% Parmesan Cheese.  Bake until bread is cooked through and lightly golden.

Mom's Minestrone



Cook in 6 qt pot for 2 hours:
2 lb sausage, browned
2 qts tomatoes
29 oz tomato sauce
8 beef bouillon cubes
1 qt water
3-4 cloves garlic, chopped
2 onions, chopped 
5 carrots, sliced
4 stalks celery chopped

Add:
2 t dried oregano
2 t dried basil
1 t salt
1 t pepper
16 oz kidney beans, drained
16 oz green beans, drained
1 1/2 c dried pasta (salad-roni)

Cook for 1/2 hour or until pasta is done.

Yummy and it gets better each day after!
