Spinach Poppyseed Salad



1 pkg spinach, washed and torn
1 pkg European Salad Blend
1/2 lb swiss cheese, grated
1/2 lb bacon, cooked and crumbled
1/2 purple onion, sliced thin
1/2 lb mushrooms, sliced thin
Poppyseed Dressing
Mix the above ingredients together just before serving.

Poppyseed Dressing:
1 c sugar
3/4 c apple cider vinegar
2 T mustard
2 T poppyseeds
2 t salt
1 1/4 c oil
1 chopped onion blended smooth
Mix together and refrigerate over night to blend flavors.  Shake well before serving.
