Breakfast Potato Casserole


24 oz shredded potatoes, thawed
1/2 c melted butter
1 c diced ham
1 heaping c shredded cheese
6 eggs
1 c evaporated milk
Salt and Pepper to taste

Mix potatoes, melted butter, salt and pepper and press into pan.  Bake @ 425 for 25 minutes.
Beat eggs, evaporated milk, salt and pepper.  Layer ham and cheese on top of baked potato crust and top with egg mixture.  Bake at 350 for 40 minutes.  The potato crust can be baked the night before.
